How to Eat your Thanksgiving LeftoversNow that Thanksgiving is over, there is the age old question of what to do with the leftovers. With a little imagination, Thanksgiving leftovers can be turned into something tasty that will really hit the spot when you are reminiscent of your recent feast. Two ideas you may want to try are using your leftovers to make an omelet and a casserole. 1) To have a great Thanksgiving Leftovers Breakfast Omelet, simply slice your turkey alternative into small slices. You can dice an onion and/or a pepper to include in this recipe as well. Put two eggs, a dash of salt, and a dash of baking powder in a bowl and whisk well. Once that is blended well, add your turkey alternative and veggies. Whisk this a few times. At this point you may like to add some spices. Some good choices would be cumin, curry, basil, parsley, or even a little chili powder if you are feeling bold. Slightly oil or butter your pan or wok and pour in your mixture and cook as you normally would any omelet. Enjoy! 2) Another great option for Thanksgiving leftovers is the proverbial Thanksgiving Leftovers Casserole. The definition of casserole is "any food, usually a mixture, cooked in a dish", and that is precisely what this dish entails! This recipe begins with the turkey alternative being cut into small strips. Add your leftover veggies. Corn, peas, snaps, carrot, potatoes, and sweet potatoes are all good options. The sky is the limit with this. If you don't have enough left over veggies, slice up a few especially for this dish and stir fry them in a little oil or butter for a while to lightly cook them. It is a good idea to include an onion since this will really add to the overall flavor and help the flavors to blend together. If you don't have any leftover vegetarian stuffing, now is the time to prepare some. You can prepare a prepackaged stuffing, such as Pepperage Farms. Just make sure that no chicken or turkey flavoring is included in the ingredients. Once your stuffing is prepared, add it to your turkey alternative and veggies and stir well. Leave a little stuffing out and set aside. Next, stir in some good homemade mushroom or onion gravy. Pour into casserole dish and top with remaining stuffing. Cook around 350 for about 30 minutes, until the dish smells fragrant and the stuffing is slightly browned on top. Enjoy! 3) Additionally, you can make sandwiches, or freeze your leftovers to eat later.
